Dr. Alex Orquiza — Food as a Historical Lens

He also tells us about the research for his new book, Taste of Control: Food and the Filipino Colonial Mentality Under American Rule, which examines what happened when American colonizers tried to shape the way Filipinos ate, cooked, and thought about the food from their country in the early 1900s.
