Dr. Alex Orquiza — Food as a Historical Lens

As millions of Americans prepare for a very unusual Thanksgiving meal this year, listen to this episode of the Providence College with Dr. Alex Orquiza, assistant professor of history. Orquiza, who worked as a classically trained French chef before he became an academic, discusses the colloquium he co-teaches, Development of Western Civilization (DWC) Through Food, which connects themes from the history, philosophy, theology, and literature that students learned in previous semesters, using food as the framework. He also tells us about the research for his new book, Taste of Control: Food and the Filipino Colonial Mentality Under American Rule, which examines what happened when American colonizers tried to shape the way Filipinos ate, cooked, and thought about the food from their country in the early 1900s.
